果实成熟,是指经过一系列生理生化变化而达到最佳食用状态的过程,是果实品质形成的必要前提。然而,随着果实成熟,其对病原菌的抗性也显著降低,导致一系列采后病害的发生,造成巨大的经济损失。传统贮藏保鲜技术通常需要抑制或延缓成熟进程,以牺牲成熟品质为代价,获得较长的货架期,这也导致果实风味和营养物质的严重丧失。因此,如何在有效维持果实成熟品质的同时,增强其对病原菌的抗性是采后生物学研究的重要课题。
